As part of this unique release we collaborated with Chateau Delamain to produce a single barrel Nouveau. For their contribution they chose to use fillioux bottles, but they wanted their front label to be different than the original - so they used a laser cutting machine (guided by master distillers Eric Fillioux & André Vallein) on each bottle's caps and seal them after each fill by hand. The Pasquet family has devoted itself to the creation of cognac since 1786. Since then, this family estate has had several changes of ownership and its producers have become, successively, Gérant-Leclerc and later Fillioux. Today it bears the name of Cognac Pasquet. The house is located north-east of the pierrerie at Léognan, on excellent limestone soil with an abundance of chalk marls that impart a special character to the eaux-de-vie made there. This estate also owns three hectares of vineyard which are aged in lees barrels before being distilled into brandies that acquire their own unmistakable personality

Pasquet is a cognac house in the heart of the Grande Champagne, where it has been creating exceptional and highly celebrated eaux de vie since 1832. The Fillioux family and Delamain have long histories, dating back to the 19th century. Another long-established house, Vallein Tercinier was bought by Fillioux in 2012. All are masterful distillers who work their farms with passion, pride and a level of specificity that shows on every bottle

The Pasquioux family is known for producing some of the finest cognacs, so much so that when François and Gaston Vallein-Tercinier sought to start their own Cognac House in 1878 they immediately turned to Henri Pasquet.

The Pasquet family is one of the oldest and most respected cognac houses in the area. Their wines have been aged from 70 to 100 years and are made from rich grape varieties such as Folle Blanche, Ugni Blanc , Colombard and Sémillon.

In France, Cognac is defined by a strict set of rules that have been in place since 1791. It must be made from the brandy made from Grande Champagne, Petite Champagne and Borderies eaux-de-vie. The grape varietals used to make these eaux-de-vie must be Ugni Blanc, Folle Blanche, Colombard and Baco Noir.

Fine cognacs, like fine wines, are classified by the type of grapes and stills used to produce them. Each region of France has its own style of expression, history and tradition that make up the unique identity of its brandies. As one will discover, there are many factors that influence these spirits. The land provides a rich soil for grapes and their fermentation creates an oaky base for distillation. Barrel aging adds layers of character as it deepens over time. Some distillers also add a little bit of caramel (yellow) or fruit extracts (red) so as not to overpower the final product with too much oakiness

Cognac Pasquet is a prestigious Cognac house with a history of distillation that goes back over 200 years. The fillioux family tradition echoes in the person of Jean-Marc Pasquet, grandson and successor to Albert Fillioux; also a member of this family, Jacques Vallein Tercinier produces a very individual and personal Cognac from most precious eaux-de-vie from his own estate vineyards. Founded by Roger Delamain in 1785 and passed down through generations, Delamain is among the oldest brands in France. Each bottle bears the inscription: “Delamain 1885” on its label enabling one to date its vintage for an automatic increase in value!
